I decided to bake some cookies for when JPS was coming home from being away, partially to be a good wife, and partially to stay awake. oops
I’m always a bit skeptical of recipes that claim to be “the best” or “perfect”. What are they comparing them too? Perhaps I have had better…Well I can confidently say- these are the best. They are easy, no mess and delicious.
The recipe is adapted from Picky Palate. She is totally right- these are the perfect M&M Cookies!
- 1 stick/1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups all purpose Gold Medal Flour
- 3 tablespoons Instant vanilla pudding mix
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup chocolate chips
- One tube of Mini M and M’s
(She uses more chocolate chips and m&m’s but we thought these were plenty)
Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper (I even used foil the first time)
Using your stand mixer, cream your butter and sugars until well combined. Add your egg and vanilla mixing to combine. Add your flour, pudding mix, baking soda and salt, stirring to combine. Add chocolate chips and M&M’s stir to combine.
I don’t have a cookie scoop, so I used a melon baller to scoop even dough. Place cookies 1 inch apart from each other, no need to press them down.
I should add that the dough is also delicious! Its exactly what you think of when you think of yummy cookie dough. It also lends to an easy clean up because the dough is thick so there isn’t much that sticks to the bowl!
